白山の里山で味わう、あたらしいヴィーガンランチ

福井県越前市・白山地区の里山に佇む白山さんちは、古民家を活用した完全予約制のランチレストランです。
田んぼと山々に囲まれた静かな環境の中で、ゆったりとした時間を過ごすことができます。

このたび、白山さんちでは新たにヴィーガン対応のランチメニューが誕生しました。
これまでの暮らしや食の積み重ねの中から生まれた、今の白山らしさを映したランチです。

近くには、コウノトリPR館 や コウノトリ観察スポット があり、里山散策や地域の自然に触れる時間とあわせて楽しめます。

新しく提供が始まったこのランチは、植物性食材のみを使用したヴィーガン対応メニュー。旬の野菜や発酵食品を中心に、素材の持つ力を引き出すことを大切にしています。

オーガニック米を主役に、味噌や豆腐、野菜料理を組み合わせた、軽やかで満足感のある内容。食後のハーブティーが、心と体をゆっくりと整えてくれます。

A Newly Launched Vegan-Friendly Lunch (Reservation Required)

Located in the quiet rural area of Shirayama, Echizen City, Shirayama Sanchi is a reservation-only lunch restaurant set in a traditional Japanese house. Surrounded by rice fields and mountains, it offers a peaceful setting where visitors can slow down and enjoy the atmosphere of the countryside.

Recently, Shirayama Sanchi introduced a new vegan-friendly lunch menu.
This meal reflects the current lifestyle and values of the Shirayama area, carefully shaped through everyday cooking and local food culture.

The restaurant is within walking distance of the Stork PR Museum and nearby stork observation spots, making it an ideal stop during a nature-focused visit to the area.

This recently created lunch menu is entirely plant-based, using seasonal vegetables and fermented ingredients to highlight natural flavors without excess seasoning.

Price: 1,600 yen(with Tax)

Organic rice forms the foundation of the meal, accompanied by miso-based dishes, tofu, and a variety of vegetables. A cup of herb tea completes the experience, leaving guests feeling calm and comfortably satisfied.

Main ingredients include:
Organic rice, miso, soybeans, tofu, soy sauce, onion, enoki mushroom, radish, sesame tofu,
green shiso, wasabi, soy milk, kuzu starch, lettuce, seaweed, cucumber, tomato, carrot,
olive oil, lemon juice, vinegar, potato, vegan panko, amazake, and other plant-based ingredients.
